Ingredients

Ingredients (for about 20 units):

250 g of sugar

125 g butter

Two eggs

250 g / ml hot water

250 g of baking powder

A pinch of salt

lemon juice or vanilla extract

Directions

1We put the butter in a bowl and melt it.

2In another medium bowl mix melted butter with sugar, eggs and water; Mix with rods . We add the pastry flour and the chosen flavoring, like the vanilla extract .

3Mix it well, best with blender, and let stand covered an hour to hydrate. Do not put the container in the refrigerator , as the butter would become firm and thicken excess dough.

4Turn On the waffle machine and wait for it to be hot, according to its instructions. We applied some butter. Pour a large dough, which we spread a little with the pot itself, and close the machine. The exact amount we will have to adjust on the fly. If the dough does not flow perfectly we will add some water , although the optimum point is only verified when watching how the wafer fills and how it remains.

5Cook the waffle iron 1-2 minutes or whatever the machine indicates. When it is ready we lift it with a spatula and we put it around the cone to form the wafers (included in the machine), helping us with a cloth so as not to burn us. Hold it, squeezing the dough, while it cools a couple of minutes, to take the shape of a cone.

6One last tip: if we make cones we should let them cool vertically, with the opening down , because if we let them lie down they will crush. It is necessary to keep them in that position, otherwise they also become deformed over time, especially if we live in a humid climate.
